Title: Cindy's Low-Fat Fruit Cake (1994 Version)

Yield: 4 Servings

2cRaisins
2 1/2cDried apples, cut up small
2 1/4cMixed dried fruit cut up
 sm(I used pineapple and
  Papaya
  This year)
3tsAllspice
1 1/2tsNutmeg
3/4tsGround cloves
3tsCinnamon
1 1/2tsNutmeg
5 1/4cHot water
1cMolasses
1/2cHoney
4 1/2cWhole wheat pastry flour
3tsBaking soda
1 1/2cOat bran

Put water, fruit and spices into a large microwaveable bowl. Cover and heat on high for 10 minutes. Remove and stir in molasses and honey. Cool.

Mix flour, bran and soda, (and walnuts if using).

Combine fruit and flour mixtures. Stir until completely mixed.

Pour into three non-stick loaf pans. Bake at 325 till done (a toothpick comes out clean). It took mine about 55 minutes.
